Everyone could use some luck & prosperity in 2010!

IT'S A TRADITION!
Here in the South, we eat black-eyed peas on New Year’s Day. Many people believe this will bring them prosperity and good luck throughout the New Year.
So eat your beans and enjoy good fortune in 2010!

LUCKY BLACK-EYED PEA DIP
recipe from HEB

Prep Time: 10 minutes
Chill Time: 30 minutes
Serves: 6 to 8

1 can black-eyed peas, drained and rinsed
1 can black beans, drained and rinsed
1 can (12 to 15 ounces) corn kernels, drained and rinsed
½ jar Robert’s Reserve Roasted Red Pepper & Onion Dip
½ cup finely chopped red onion
¼ cup chopped fresh cilantro
4 ounces feta cheese, crumbled

1. Drain and rinse black-eyed peas, beans and corn. Place in a large mixing bowl. Stir in Roasted Red Pepper & Onion dip, onion and cilantro. Cover and refrigerate at least 30 minutes to allow flavors to mingle.
2. Toss with feta cheese right before serving. Serve with tortilla chips or toasted pita wedges.

- about the Roasted Red Pepper & Onion dip - You can do a store locator search on their website (see the link above). For my friends and fam in Utah - it says you can get it at Kneader's on State St. in Orem. For my friends and fam here in Texas - you can find it at HEB.

*ANOTHER NOTE:
- ok... we just finished trying it and here is a breakdown... lol. It's def yummy how it is, but I think next time I may make a few adjustmenst... i'll add a bit of salt, some more of the red pepper & onion dip and cilantro and I will cut down on the feta and onions. And I will let it sit a bit longer before serving. I also tasted it before I added the feta and it was yummy - for those of you that don't like feta cheese.

This looks SOOOOOO good. I'm making it. Nothing better then mexican food mixed with feta.

Hope you had a double helping for me.....I won't eat black-eyed peas....blech! I wonder if I could substitute then with something else, because that recipe does look good....other than the peas! :)
