Pumpkin Bars


Pumpkin Bars
From the Kitchen of Sherron Kendrick

CREAM:
4 eggs
2 cups pumpkin
1 cup oil

ADD:
2 cups sugar
2 cups flour
2 teaspoons cinnamon
½ teaspoon salt
1 teaspoon soda
½ cup nuts or raisins, optional (I don’t use either)

Cover a jelly roll pan with foil. Spread batter. Bake at 350 for 20 minutes. Frost with icing below.

ICING:
3 ounces cream cheese
1 teaspoon vanilla
¾ stick butter
1 2/3 cup powdered sugar
2 Tablespoon milk (you can add a little more if needed to thin out icing)

Beat ingredients together and spread over cooled bars.

** This recipe is from a good family friend, Sherron. They are so delicious and EASY. And they make a ton - so it is a great thing to make for parties and stuff. And because the pan is covered with foil it is very easy clean up. All my musts for a recipe! Lol.
